Quinoa pan with smoked tofu
Ingredients
- 150 g Smoked tofu
- 1 Onion
- 1/2 Zucchini
- 3 Tomatoes
- 1/2 Peppers yellow and red
- 100 g Quinoa
- 200 ml Vegetable broth
Anleitung
- Chop the onion into small pieces. Fry them in olive oil until translucent.
- In the meantime, cut the zucchini, tomatoes and peppers into cubes.

Ingredients
- 1 Onion
- 2 Bell pepper red or yellow
- 500 ml Vegetable broth
- 1 EL Flour
- 150 g Tofu
Anleitung
- Chop the onion into small cubes. Fry them with olive oil until translucent.
- Meanwhile, remove the core of the peppers and cut them into small pieces.
- Add the bell bell pepper to the onion. Sauté for 2 minutes. Deglaze with vegetable broth. Simmer for 5 minutes.
- Puree the soup with a blender or as I do it: with the smoothie maker :)
- Pour the soup back into the pot. In a cup, mix 3 tablespoons of water with a tablespoon of flour. Now add it to the hot soup, it will make it thicker. Let the soup boil a little longer.
- Fry the tofu on both sides. Cut it into cubes and add it to the soup. Done!
