Scrape the pulp out of the vanilla pod. Melt the coconut oil in a saucepan - alternatively, it's also possible in the microwave.
Mix eggs, cottage cheese, coconut oil and vanilla pulp in a bowl. You can simply take a whisk for this. But it also works well with a fork.
Now add protein powder, erythritol and cinnamon. Let the dough rest for 5 minutes. Meanwhile, you can heat the waffle iron and coat it with a little oil.
You will need 2 tablespoons of batter per waffle. Close the waffle iron and let the waffles bake on both sides for about 1 minute. Done!
