Wash the apricots. Puree them together with the lemon juice. Bring the mousse to a gentle boil. Allow the excess water to escape. Attention: Do not forget to stir!
Wash the millet and bring it to a boil with the mixture of water and milk. Once the millet boils, turn down the temperature and let it simmer only slightly. The cooking time is about 30 minutes. Taste the millet and see if it is soft enough for you. If it is still too grainy, cook it for another 5 minutes.
Set the millet aside for a bit until it is a comfortable temperature to eat. Stir in the cinnamon and vanilla.
