What is special about the chocolate banana cake?

We do not use refined sugar! We bake chocolate banana cake with Birch sugar* (Xylitol*, Xucker). It doesn't send blood sugar levels on a rollercoaster and doesn't give caries bacteria a chance.

Chocolate cake recipe

It is important that you use ripe bananas, they give the cake a special sweetness. Then you also save some of the birch sugar.

And instead of white flour, just use spelt flour. And your cake is as healthy as a cake can be.

What you need to pay attention to when baking banana cake with chocolate cream

The chocolate cake with bananas should be eaten within 2 days. This is due to the fresh fruit. It could happen that the bananas otherwise go bad. And logical: the cake must be stored in the refrigerator.

The basis for our small chocolate cream cake is a sponge cake dough with cocoa. In the chocolate cream is an extra portion of baking Cocoa powder*. Yummy :)

The cream begins to run even when the cake is only lukewarm. So better wait a little longer. I always prepare the sponge cake a day in advance. And the next day I assemble the cake.

For the chocolate cream

  • 250 g Cream
  • 150 g Dark chocolate without sugar
  • ¾ EL Cocoa powder
  • 1 Banana

For sponge cake

  • 6 room temperature eggs
  • 130 g Birch sugar
  • 1 Pinch Salt
  • 170 g Spelt flour
  • 15 g Cornstarch
  • 3 EL Cocoa powder
  • 2 EL Baking powder

Anleitung

The chocolate cream

  • Bring cream and chopped couverture to a boil while stirring. Leave to cool in the refrigerator. This will take about 2 hours. In the meantime, you can prepare the cake.
  • Whip cream-chocolate mixture with a mixer to a chocolate cream.

The cookie

  • Separate the eggs and preheat the oven to 180° top and bottom heat.
  • Whip the egg whites with a pinch of salt. After stirring for 2 minutes, slowly add 3/4 of the sugar. Beat egg whites until well stiff.
  • Mix flour, baking powder, cocoa, cornstarch and sift through.
  • Beat the egg yolks with the remaining birch sugar. Beat until the mass has doubled
  • Gently fold the beaten egg whites into the egg yolks
  • Step by step fold in the dry ingredients
  • Put it in the cake tin and bake for 25-30 minutes.
  • Remove the cake from the oven and then immediately turn it upside down and remove from the mold after cooling.
  • Cut the sponge cake into three parts. The cake must be completely cooled before you continue. Chop 1-2 bananas.
  • Spread a layer of chocolate cream on the cake base. Fill the banana pieces into the cake
  • Place the next sponge cake on top. Spread the top and sides of the cake with chocolate cream.
  • Now put the cake in a cool place for 2 hours, so that it is really well done.
