This is my absolute favorite recipe for hot summer days. Then, when you're hungry but can hardly get a bite down because of the heat.

Bulgur salad with feta
Ingredients
- 100 g Bulgur
- 125 ml Vegetable broth
- 1 EL Lemon juice
- 100 g Cocktail tomatoes
- 1/2 red onion
- 1/2 Bell bell pepper yellow
- 1/2 Cucumber
- 5-6 Dried tomatoes
- 50 g Feta
- 2 Stems Parsley
For the dressing
- 3 EL Olive oil
- 3 EL Balsamic vinegar
- 1/2 TL Herbal salt
- 1 Stem Mint
Anleitung
- Boil the bulgur with vegetable broth and lemon juice. Let it swell for 20 minutes.
- Chop tomatoes, onion, bell bell pepper and cucumber. Cut the dried tomatoes into pieces.
- Dice the feta and chop the parsley.
- When the bulgur is lukewarm, you can add the fresh ingredients. Mix everything in a bowl.
- Mix olive oil, balsamic vinegar, herb salt and finely chopped mint.
- Put it in a bowl and stir well. Done!
