Green asparagus strawberry salad
Ingredients
- 400 g Green asparagus
- 250 g Strawberries
- 100 g Arugula
- 125 g Mini mozzarella balls
- 50 g Pine nuts
- 1/2 Confederation Basil
- 80 ml Olive oil
- 1 TL Dijon mustard
- 1 TL Agave syrup
- 2 EL White wine vinegar
- Salt and pepper
Anleitung
- Wash the salad and distribute it on the plate
- Wash the asparagus and cut off the woody ends. Cut it into very oblique and thin pieces.
- Heat the olive oil in the pan and fry the asparagus for 2-3 minutes. Season the asparagus with salt and pepper and set aside.
- Wash the strawberries and remove the green. Then cut them into thin slices.
- Roast the pine nuts without fat in a pan. They should get a golden yellow color.
- For the pesto, wash the basil. Pat it dry and pluck off the leaves.
- Put the basil in a tall container with the pine nuts. Add 50 ml of olive oil and 1/2 teaspoon of salt.
- Puree everything into a fine creamy pesto.
- Stir together the dressing with mustard, agave syrup, white wine vinegar, a little water and olive oil. Season with salt and pepper.
- Arrange the asparagus, strawberries and mozzarella on the plate. Add some dressing and pesto on top. Done!

For our asparagus strawberry salad, we prepared the asparagus in a pan. Cut the asparagus spears into long pieces and fry them for five minutes in a little olive oil. Season the asparagus with salt and pepper. Done!
Asparagus from the oven
You can also prepare green asparagus in the oven. However, this takes a little longer. Wrap the asparagus spears with a little butter or oil, salt and pepper in aluminum foil. Let the asparagus cook at about 180 degrees for 17-20 minutes.
