We bake a curd casserole without egg for fitness fans. A super delicious casserole with cottage cheese and berries ready in 5 minutes.

A friend of mine has problems with eggs. She gets stomach ache from them. She loves sweets. When I recently invited her over for dinner, I was faced with a challenge. I wanted to prepare a sweet recipe with berries.

Let's take a quick look at the ingredients before we get right to the recipe.

The hazelnuts

Let's start right from the bottom. I'm sure you're familiar with cakes and other delicacies whose bottoms are made of old cookies. I always find that visually beautiful. But cookies contain a lot of sugar, so because I couldn't find any that met my expectations, I came up with an alternative.

Instead of cookies I take ground hazelnuts*. As they are mixed with the butter and get a lot of moisture from the quark, the casserole base holds together.

Hazelnuts have a very subtle flavor that complements curd beautifully. If you are not a fan of hazelnuts, you can also try it with almonds or chopped oatmeal.

The curd

The most important ingredient in the microwave curd casserole without egg, is already in the name. It is the quark itself. I use low-fat quark to keep the fat content lower.

This is already high enough due to the butter. But you can also use a conventional curd cheese. It works with both.

The butter

You can't do without a little fat, otherwise the casserole will stick to the pan and the hazelnuts will break down into their individual components. But since the curd provides a lot of moisture, we need only a little butter.

And a little sin simply has to go into a sweet dessert.

Vanilla flavor

The easiest way is to use vanilla flavor drops. But of course you can also use a fresh vanilla bean. However, since I promised you that the Quarkauflauf is ready in 5 minutes, I take this time the faster variant - the drops.

The sweetener

My casserole is made with Erythritol* sweet. This has the great advantage that it is virtually calorie-free and provides a pleasant sweetness.

If you are not so strict about sugar, you can replace some of the sugar with vanilla sugar and save the flavor drops.

But beware: Just because we omit sugar, white flour and Co, the casserole is far from mega healthy. What I want to say: You can eat it with a clear conscience as a dessert. Or even as a main course, but not in quantities. Because the butter and nuts provide for proper calories.

When you're ready to start, you're ready to go. In less than 10 minutes you will have your casserole in front of you and you can enjoy it.

By the way, the recipe is enough for two white bowls, as you see in the photo.

Ingredients
 

  • 2 TL Butter
  • 3 EL Ground hazelnuts approx. 30 gram
  • 110 g Curd
  • 5-10 Drop Vanilla Drops
  • 2 EL Erythritol
  • 1 Handful Forest blueberries

Anleitung

  • Put the butter in the casserole dishes. Put it in the microwave and heat it until it melts. Spread the butter in the baking dish.
  • Put the ground hazelnuts in the baking dish and mix them with the butter. Press the mixture flat with your fingers so that the bottom of the mold is covered.
  • Mix curd, vanilla drops and erythritol in a bowl.
  • Put the curd cream on top of the nut mixture and smooth it with a spoon.
  • Bake the curd casserole in the microwave on medium heat. Heat it for 3 minutes. Done!
  • While the sweet casserole is in the microwave, you put the berries in a cup. They are now about 1-2 minutes in the microwave and then become quite liquid, which fits mega delicious to the casserole.

The casserole tastes best if you eat it immediately. So still in the warm state. If you use smaller casserole dishes, as I did in the photos, the baking time will be shorter.

If you heat it too long, the curd will become tough and hard when it cools down. Therefore, it is best to eat it immediately and warm it only briefly.

Oh yes and: Attention - the curd bubbles quite a bit in the microwave. Therefore, be sure to put a plate underneath and don't fill the casserole dishes too full.

How you can refine the quark casserole

If you're not quite convinced of the recipe yet, that's no problem. You can flavor the quark casserole with many ingredients.

Try this

  • Oatmeal or Chia seeds* instead of hazelnuts,
  • Stir in berry compote,
  • Cinnamon* instead of vanilla,
  • Raisins,
  • completely abandon berries and instead apple pieces or pear pieces,
  • Coconut oil* instead of butter.

Or serve the casserole with a homemade compote such as peach, cherry or plum. If you want to treat yourself, add a scoop of ice cream to the warm casserole. Or a little whipped cream.

By the way, it tastes best fresh. If you want to store the casserole in the refrigerator, be sure to put a lid on it. Otherwise it will dry out pretty quickly.
