That's why we made our matcha muffins without sugar. In recipe 1 we replace the sugar with honey and in recipe 2 we take Birch sugar* instead of refined sugar. Both recipes for matcha muffins are quick and easy to make.

Matcha muffins with honey and hazelnut

You need for 12 pieces

Here's how:

Preheat the oven to 180°.

Separate the eggs and beat the whites until stiff. Put it aside.

Now stir the room-warm butter with honey until fluffy. Add the egg yolk and continue beating. Mix the grated lemon zest to the dough. Now add the matcha powder.

Mix flour, hazelnuts and Baking powder* and fold it into the batter. If you like, you can now add a little green Food coloring* mix in.

Fold in the beaten egg whites and then put the matcha muffins in the oven. Bake them for 20-25 minutes at 180° top and bottom heat.

Matcha muffins with carrots and coconut

You need

  • 1 TSP Baking powder*
  • 5 medium eggs
  • 3-4 TABLESPOONS Birch sugar*
  • 150 gram grated carrots
  • 100 gram coconut
  • 100 grams wholemeal flour
  • 1/2 - 1 tablespoon matcha powder

Here's how

Preheat your oven to 180° top and bottom heat.

Peel and grate the carrots.

Beat the egg whites until stiff.

Stir egg yolk and Birch sugar* until frothy. Finally, add the matcha powder. Stir again until firm.

Mix flour and Baking powder*. Then carefully fold it into the egg mixture.Birch sugar*-Mass.

Now add the carrots and the coconut. Finally, fold the beaten egg whites into the cake batter. If you want you can add a little Food coloring* to it. This will intensify the green.

Now come your matcha muffins with Birch sugar* and carrots in the oven for 20-25 minutes.

Sugar free matcha topping for muffins

If that looks too toxic to you, you can simply omit the powder from the recipe. Instead of in the dough, the matcha powder then ends up in the topping. Our matcha muffins become cupcakes :)

Here's how:

Mix 1 package of cottage cheese with 2 tablespoons of yogurt and honey (to taste). Stir until you have a uniform mass. Then add 1 tsp of matcha powder. You can increase the matcha dose as you like. But make sure that the powder makes the mass slightly bitter.
