The bottom line is that the dough is not very spectacular. You make a normal yeast dough and replace the sugar with Birch sugar*. Now our bunnies are also edible for diabetics. Birch sugar* is much healthier than refined white sugar!

The yeast dough with Birch sugar* becomes nice and fluffy and has a very pleasant sweetness.

This is what you need for the yeast bunnies:

  • 200 ML milk
  • 100 gram butter
  • 500 gram wheat flour
  • 1 package dry yeast
  • 1 egg
  • 1 pinch salt
  • 1-2 TBSP Birch sugar*

This is how you make the yeast dough:

Mix flour and yeast with salt, the egg and Birch sugar*. Knead firmly. The best way to do this is with a mixer with dough hooks.

Now heat the milk and melt the butter in it. Attention: Do not let it get hot! Heat kills the yeast! Your yeast bunnies can then not rise.

It is best to heat just until the butter begins to melt, then set aside and let the butter melt slowly.

Mix the milk-butter mixture to the dough and knead it firmly with the mixer.

Cover the dough with a tea towel and put it on the heater. Important: Be patient! This can take up to an hour.

Shape yeast bunnies

Take small lumps from the dough. Shape them into balls. And with scissors cut the little rabbit ears into the dough.

Now, using a toothpick, drill two small holes in your yeast bunnies for the eyes.

Before going into the oven, set your yeast bunnies aside for another 15 minutes to rest.

Bake the yeast bunnies until golden brown

To make them nice and golden, brush the yeast bunnies with a mixture of one egg yolk and a sip of milk. Stir the mixture well and apply it to the bunnies with a brush.

Place them on a tray with baking paper. Caution: It is better to keep a little too much distance than too little. The yeast bunnies still rise a little in the oven.

Now they go into the oven at 180° top and bottom heat for about 20 minutes.

Yeast bunnies are very simple to prepare but a real eye-catcher at the Easter table. Those who work with yeast must not let the milk get too hot and need time to let the yeast rise.

Next time we'll make the ears a little bigger. Our yeast bunnies look more like kittens. But does not matter at all, they taste so just delicious :)
