The search for the perfect chocolate cake recipe is like the search for the perfect pair of jeans. The chocolate cake should be fluffy and, of course, moist, and a little healthy wouldn't be bad either. In other words: not so easy, but not impossible either.

The highlights of my vegan chocolate cake

Healthy lupine flour

For the cake I used, among other things, sweet lupine flour and raw cocoa. Sweet lupine flour is made from the seed of the sweet lupine and originates in South America. The special thing about the flour is the high protein and iron content.

The taste can be described as nutty, but the proportion of the total amount of flour should only be a maximum of 15 percent, otherwise the inherent flavor stands out too much.

Baking cocoa versus raw cocoa

Raw cocoa is rich in nutrients and vital substances. Raw cocoa powder is processed differently than conventional Cocoa powder* The raw cocoa is not roasted, but only lightly fermented, gently dried and then finely ground. As a result, the raw cocoa retains its high nutritional value.

Ingredients for the chocolate cake

Optional

  • 100 g dark chocolate or rice milk chocolate
  • Fruits

Preparation

Preheat oven to 170 degrees convection. Finely chop the dark chocolate.

Chocolate walnut cake with lupine flour

Spelt flour, sweet lupine flour, Baking powder*, Coconut blossom sugar*, raw cocoa and ground hazelnuts* Mix together in a large bowl.
Add applesauce, canola oil and lukewarm water and mix well. Fold in walnuts and chopped chocolate.

Grease a round springform pan (18 cm diameter) and dust with flour. Pour in the dough and bake in a preheated oven for about 50 minutes.

It is best to test the dough with a chopstick in between. If the dough gets too dark, cover the cake with aluminum foil.

Allow the cake to cool. If you like, you can glaze the cake with chocolate. To do this, melt the chocolate and coat the chocolate walnut cake with it and top with fruit.
