Why you should make spinach pesto vegan

So today I'm swapping basil for spinach and parmesan for yeast flakes.

Pesto usually consists to a large extent of Parmesan cheese.

But you can make spinach pesto vegan if you replace the Parmesan with yeast flakes.

Taste-wise, yeast flakes are reminiscent of Parmesan cheese and visually they are also difficult to distinguish at first glance.

What I'm trying to say is that for anyone who doesn't eat a vegan diet, it won't make much difference taste-wise.

But if you have invited guests who do not tolerate cow's milk, it makes a very big difference for them.

Because I have a lot of friends who have problems with certain foods, I like to try new recipes all the time. This was one of the experiments I dared to do the previous year.

On the one hand, because the garden was full of spinach and, on the other hand, because vegan spinach pesto simply aroused my curiosity.

Ingredients
 

  • 200 g Fresh leaf spinach
  • 60 g Pine nuts
  • 50 g Walnuts
  • 1 Garlic clove
  • 5 EL Olive oil
  • 20 g Yeast flakes
  • 1 TL Salt
  • 1 TL Lemon juice

Anleitung

  • Roast the pine nuts in a frying pan. Important: without oil. When they start to brown, they are ready.
  • Place the pine nuts, walnuts, spinach, olive oil, garlic clove and yeast flakes in a food processor. Blend the ingredients thoroughly until you have an even paste.
  • Season the spinach pesto with salt, pepper and a little lemon juice.

You have prepared too much? Spinach pesto can be stored well in the refrigerator. Pour a little more oil on the pesto for this purpose. Olive oil preserves the spinach cream for at least a week.

If you want to keep it longer, you should put it in ice cube molds and freeze it. That way, it's always perfectly portioned and ready to go when you're in the mood for spinach.
