Instruction
For the fluffy spelt flour muffins, beat the eggs in a bowl until frothy
Sift in the birch sugar. And add the softened butter.
Now alternately stir in milk and the flour-baking powder mixture
Put the batter into the cups. Now put a blackberry in each muffin. Make sure that the berry disappears completely into the batter.
At 180° the muffins with spelt flour need about 30 minutes.
The cream cheese frosting
Whip the cream until stiff.
In a second bowl, mix cream cheese and birch sugar.
Fold in the cream.
Squeeze the blackberries with a fork. You can also do this with a food processor and pass them through a sieve.
Mix the blackberry juice into the frosting.
Put it in a piping bag. Apply the frosting to the cooled cupcakes. Top with a blackberry for the eye.
