September is pumpkin time! In this post, mom food blogger Moana Werschler aka Miss Broccoli shows her delicious pumpkin risotto with whole grain rice and barley.

This vegan risotto is a dream for all pumpkin lovers. To make it even more complete, this recipe is with whole grain rice and a little barley.

These go well with the nutty pumpkin flavor. As a pumpkin I recommend not the fibrous Muscat pumpkin but a Hokkaido or butternut squash, which is nice and creamy.

Pumpkin risotto with butternut and brown rice

Ingredients for 2 people:

  • 200 g brown rice
  • 50 g barley
  • Rapeseed oil
  • 4 dl broth
  • 1 onion
  • 5 dl white wine
  • 200 g pumpkin (butternut is best)
  • Parsley
  • Salt, pepper

Preparation butternut risotto:

Cut the onion into small pieces. In a pan, heat canola oil, fry the onion, quench with the white wine.

Now add the rice and barley. Sauté briefly and then add 2/3 of the warm broth, simmer on low for about 30 minutes.

Add stock as soon as the rice needs more liquid. Whole grain rice needs a little longer than normal rice.

Meanwhile, peel the pumpkin and cut into small pieces. In a second pan cook the pumpkin pieces with a little broth until done.

Put away a few pieces for garnish.

Puree the rest in a cup with a blender. Add the pumpkin mixture to the rice, which should now have absorbed most of the water. After 35 - 40 minutes, the rice should be cooked.

Arrange the pumpkin risotto on a plate and garnish with parsley and the pumpkin pieces.
