Quick muffins for Halloween
Ingredients
- 3 Eggs
- 70 g Birch sugar
- 160 g finely grated Hokkaido
- 60 ml Oil
- 150 g Whole spelt flour
- ½ Pkg Baking powder
- 1 TL Cinnamon
For the topping with cream cheese
- 1 Pkg Curd
- 100 g Cream cheese
- 1 TL Grating of one lemon
- 3 TL Birch sugar
- 1 Pinch Cinnamon
- Food colors: purple, green, orange
Anleitung
- Preheat oven to 170° hot air
- Separate the eggs. Beat the egg yolks with birch sugar and oil until foamy
- Stir in hokkaido and a small pinch of salt
- Add cinnamon, baking powder and flour
- Beat egg whites until stiff and fold in carefully
- Pour half of the batter for the spider muffins into muffin tins.
- Add a tablespoon of baking cocoa to the other half. Put it into the muffin tins.
- Bake for about 25 minutes and allow to cool
The topping for the fun muffins
- Mix curd and cream cheese together
- Stir in lemon zest, birch sugar and cinnamon
- Divide the topping into three parts and color each with a different food coloring
- Use a piping bag to pipe onto the cold (!) cupcakes and decorate with plastic spiders, eyes and other decorating material
