Silken tofu in the chocolate mousse

Anyone who uses silken tofu for a vegan chocolate mousse knows that this tofu variant is quite healthy. Silken tofu contains a lot of protein, little fat and is cholesterol-free.

Tofu also contains iron, calcium, zinc, magnesium, folic acid and potassium. Not for nothing is silken tofu called the secret superpower in vegan cuisine.

It is made from the soybean and therefore contains all essential, i.e. vital, amino acids that our body cannot produce itself.

Silken tofu is super creamy, delicate and still quite unknown to many. By the way, he got the name because he is as soft as silk. Thanks to its pudding-like consistency, it can be used very versatile.

Chocolate in the mousse

What was that about healthy again? Don't worry, this vegan chocolate mousse with silken tofu is really healthy. We do not take a conventional chocolate, but a dark Chocolate without sugar* - but with a high cocoa content.

It is used with Birch sugar* and therefore contains far fewer calories. For the teeth Birch sugar* is not harmful and is even said to prevent tooth decay. So you can go for it without hesitation.

Milk chocolate is not suitable for this purpose. If you use it, the chocolate cream is no longer vegan. It is also too sweet. The classic tart flavor that dark chocolate* into the mousse is also completely missing.

Vanilla and coconut cream

Vanilla and chocolate harmonize quite wonderfully with each other. A very pleasant aroma brings vanilla bean into the mousse - so no flavoring, but real vanilla.

The taste is much better and more intense than in vanilla sugar or vanilla flavoring. If you do not have a pod at hand, you can of course use flavoring.

Finally I give a little homemade coconut cream on top of the chocolate cream. It always looks nice to add an optical eye-catcher to the dark mousse. Alternatively, it also do coconut sprinkles or fruit.

Remember to add the fruit to the mousse just before eating, as it will become unappetizing once cut.

Here comes the step by step instructions

Ingredients

  • 100 g sugar free chocolate
  • 130 g silken tofu
  • 1/2 vanilla bean

Also: a sharp knife, a board, a stand mixer and two pots.

1. prepare the chocolate

In order for the chocolate to mix, it must be melted. Only when it is liquid, it combines to a vegan chocolate mousse with silken tofu. This works quite well in a water bath. Alternatively, also in the microwave, but burns so dark chocolate* in the microwave.

So, should you decide to use the microwave, you will need to stop it every 30 seconds, stir the chocolate, and then start it again.

With the water bath you are on the safe side.

Fill a larger pot 3/4 full with water. Bring the water to a boil.

Take a smaller pot that can be placed inside the large one. I like to use a pot with a long handle. It can be placed very well in the larger pot without falling in.

Chop the chocolate and put it into the small pot. Make sure that no water gets into the small pot. The chocolate melts now because the bottom of the pot becomes hot due to the steam.

2. prepare the silken tofu

While the chocolate is melting, stir it from time to time. In the meantime, you can already take care of the tofu.

Pull off the lid of the package and pour off the water. Put the tofu in a tall mixing bowl: I like to use the bowl that comes with my Blender* was there.

The high vessel has the advantage that the whole kitchen is not full of tofu and chocolate. So the mousse stays where it belongs :)

3. the vanilla bean

Scrape out the pod. Cut it in half lengthwise and open the sides. Scrape out the pith with a sharp knife.

Add the vanilla pulp to the silken tofu.

4. prepare the vegan chocolate mousse with silken tofu

When the chocolate has melted, stir it into the tofu. Use a blender and stir until you have a uniform mass.

Fill the mousse into beautiful glasses. Ready.

5. the topping for the chocolate mousse

Chill the chocolate cream for about 30 minutes if you want to use coconut cream or another cream as a topping.

If you can do without it, you can eat the dessert right after it is prepared. It is a little warm, but still tastes wonderful.
