Wash the quinoa thoroughly in a sieve. Put it in a pot with the water and bring to a boil.
Meanwhile, chop the onion, bell bell pepper, tomatoes, zucchini.
First fry the onion with coconut oil in a pot. When it is translucent, add the rest of the vegetables. Add about 5 tablespoons of tap water and stir in the tomato paste.
Season with curry powder, salt and pepper. Cover and simmer gently for about 15 minutes. By now, the quinoa should be ready. Stir it into the vegetables and sprinkle the parsley on top. Done!
